Instructions:
- Place chicken carcass in your instant pot. I usually shred a rotisserie chicken from Costco or Walmart and use that.
- Fill the pot with water until you reach the ‘max’ line (it is on the inside of the pot).
- Add rings of onions, celery, carrots, salt, pepper, garlic salt, onion powder, etc. Whatever flavors you and your family like.
- Cover with the lid.
- Pressure cook for 4 hours.
- When the 4 hours are up, release the pressure in your instant pot completely. When no more steam is releasing, remove the lid.
- Strain the chicken broth into a large glass measuring cup. Discard the carcass and other contents.
- At this point, you can let the broth cool and then place into ziploc bags to freeze or you can pour the broth into jars to pressure can.
Tip: You may want to cook your chicken broth outside, on your back porch, in the garage, or a shop because it creates a very strong smell that you probably won’t want in your house. I usually just set up a small table on my front porch and do it there.
