Quick & Easy Beef Stew

Growing up on a farm, we always had beef from our cows. Almost every single meal my mom made had some kind of beef in it- especially ground beef. She always said that if she had ground beef, cream of mushroom soup, and potatoes, she could make anything! My knowledge and love of cooking comes entirely from her teaching and inspiration. I come from family of 9 kids and a dad who is a hard-working farmer. I am sure making meals for all of us was quite a challenge for my mom and yet she always had something. And it was usually simple but delicious! This beef stew recipe is no exception. You don’t need a ton of ingredients or even a ton of time! Enjoy this beef stew recipe- inspired by the one my mom used to make for us on a winter night.

Ingredients:

  • 1/2 pound beef stew meat
  • 1/4 onion, cut in rings
  • 3 medium potatoes, peeled and chopped
  • 1/3 cup chopped carrots
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 2 small cans french onion soup
  • 3 cups water
  • 1 packet of Lipton onion soup mix
  • Pepper or Montreal steak seasoning to taste

Instrucions:

  1. In a large pot, brown your beef stew meat on medium heat.
  2. Once the meat is starting to brown, add the onions, Worcestershire sauce, onion powder, and cumin. Let simmer until the meat is all the way browned and the onions become fragrant and soft.
  3. Add in your chopped carrots and potatoes, and then the french onion soup and water. Stir and cover. Let the coup cook on medium-high heat until the potatoes and carrots become tender.
  4. Finally, add the onion soup mix. I also like to add pepper and Montreal steak seasoning at this point.
  5. Stir in the seasonings and enjoy! The soup will be quite hot so you may want to let it cool for a bit before serving… especially with little ones!

I was amazed at how much my husband and my 2 year old enjoyed this stew! It was easy, quick, and I had all the ingredients on-hand. Serve it with some homemade bread or biscuits and this is the perfect winter meal!
